Chocolate Banana Naturally Sweet Ice Cream Recipe

Ingredients
  • 4 bananas, peeled, cut into chunks, and frozen
  • ¼ cup unsweetened cocoa or similar, like 2 packets The Daily Good Greens Chocolate
  • a few tablespoons of water
  • 1 chocolate bar, such as SuperFoods Chocolate, chopped into small pieces
  • peanut butter and sea salt for topping
Instructions
  1. Let the bananas soften for a while at room temperature or in the microwave. You don’t want them to be rock hard because they’ll take a toll on your food processor or blender, but you don’t want them to be soft because you’ll get more of a smoothie texture. They should be frozen but starting to soften on the outside.
  2. Pulse the bananas in a food processor until smooth. This is a heavy duty task – a blender can do it, but it’s going to need some help (a few stirs here and there) to move through the blender smoothly.
  3. Dissolve the cocoa in the water to allow it to incorporate into the ice cream better. Add the chocolate paste to the food processor and puree again until incorporated.
  4. Stir in the chocolate bits and anything else you might like – vanilla, sea salt, etc. Serve topped with drizzled peanut butter!

Peanut Butter and Banana Pancakes

Ingredients

  • 5.4 ounces gluten-free baking and pancake mix (about 1 1/4 cups)
  • 1 cup warm water
  • 1/2 cup creamy peanut butter
  • 1/8 teaspoon salt
  • 1 large egg
  • 1/2 cup chopped banana (about 1 small)


Directions
1. Weigh or lightly spoon baking mix into dry measuring cups; level with a knife. Combine baking mix and next 4 ingredients in a medium bowl, stirring well with a whisk. Fold in banana.
2. Heat a large nonstick skillet or griddle over medium heat. Pour 1/4 cup batter per pancake onto hot pan. Cook 2 to 3 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook 2 to 3 minutes or until bottoms are lightly browned. Repeat procedure with remaining batter.

Peanut Butter-Banana Spirals

Ingredients
1/2 cup reduced-fat peanut butter
1/3 cup vanilla low-fat yogurt
1 tablespoon orange juice
2 ripe bananas, sliced
4 (8-inch) fat-free flour tortillas
2 tablespoons honey-crunch wheat germ
1/4 teaspoon ground cinnamon

Directions
1. Combine peanut butter and yogurt, stirring until smooth. Drizzle juice over bananas; toss gently to coat.
2. Spread about 3 tablespoons peanut butter mixture over each tortilla, leaving a 1/2-inch border. Arrange about 1/3 cup banana slices in a single layer over peanut butter mixture. Combine wheat germ and cinnamon; sprinkle evenly over banana slices. Roll up. Slice each roll into 6 pieces.

Maple-Glazed Bananas

Ingredients
1/4 cup butter
1/4 cup packed brown sugar
1/4 cup pure maple syrup or maple-flavored syrup
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
3 firm, ripe bananas, halved lengthwise and cut into 1-inch pieces
1 pint vanilla ice cream

Directions
1. In heavy medium skillet, melt butter over medium heat. Stir in brown sugar, syrup, lemon juice, and cinnamon. Bring to boiling; reduce heat. Simmer, uncovered, for 2 minutes. Add bananas; spoon some of the syrup mixture over bananas. Cook and stir for 1 to 2 minutes more or until heated through. Remove from heat.
2. Scoop ice cream into dessert dishes. Spoon warm bananas and syrup over ice cream.

Gluten-Free Banana Bread

Ingredients
1 cup boiling water
1/2 cup chopped dates
4 large eggs
2 cups mashed, very ripe bananas (about 4)
3/4 cup granulated sugar
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1 1/2 cups brown rice flour
1/2 cup sorghum flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/3 cup butter, melted
1/2 cup chopped walnuts

Directions
1. Preheat oven to 350°. Pour 1 cup boiling water over dates in a small bowl. Let stand 10 minutes. Drain and pat dry.
2. Lightly beat eggs with a whisk in a large bowl. Whisk in bananas and next 3 ingredients until blended.
3. Stir together brown rice flour and next 4 ingredients in a small bowl. Gently stir flour mixture into egg mixture, stirring just until blended. Gently stir in melted butter, walnuts, and dates. Spoon mixture into a lightly greased 9- x 5-inch loaf pan.
4. Bake at 350° for 1 hour to 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan to wire rack, and cool completely (about 1 hour).

Marbled-Chocolate Banana Bread

Ingredients
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/4 cup butter, softened
1 1/2 cups mashed ripe banana (about 3 bananas)
1/2 cup egg substitute
1/3 cup plain low-fat yogurt
1/2 cup semisweet chocolate chips
Cooking spray

Directions
1. Preheat oven to 350°.
2. Lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.
3. Place sugar and butter in a large bowl; beat with a mixer at medium speed until well blended (about 1 minute). Add banana, egg substitute, and yogurt; beat until blended. Add flour mixture; beat at low speed just until moist.
4. Place chocolate chips in a medium microwave-safe bowl, and microwave at HIGH 1 minute or until almost melted, stirring until smooth. Cool slightly. Add 1 cup batter to chocolate, stirring until well combined. Spoon chocolate batter alternately with plain batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Swirl batters together using a knife. Bake at 350° for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

Bananas Foster Upside-down Coffee Cake

Ingredients
1/2 cup butter, softened and divided
2 tablespoons rum
1 cup firmly packed light brown sugar
1/2 cup chopped pecans, toasted
2 medium-size ripe bananas
7 maraschino cherries
3/4 cup granulated sugar, divided
2 large eggs, separated
3/4 cup milk
1/2 cup sour cream
1 teaspoon vanilla extract
2 cups all-purpose baking mix
1/4 teaspoon ground cinnamon
Whipped cream (optional)

Directions
1. Melt 1/4 cup butter in a 10-inch cast-iron skillet over low heat; stir in rum. Sprinkle brown sugar evenly over butter mixture. Remove from heat.
2. Sprinkle pecans evenly over brown sugar mixture. Cut bananas in half crosswise; cut each half lengthwise into 3 slices. Arrange banana slices in a spoke pattern over pecans. Cut 6 cherries in half. Place 1 cherry half between each banana slice. Place remaining whole cherry in center of skillet.
3. Beat remaining 1/4 cup butter and 1/2 cup granulated sugar in a large bowl at medium speed with an electric mixer until blended. Add egg yolks, 1 at a time, beating just until blended after each addition. Add milk, sour cream, and vanilla, beating just until blended. Combine baking mix and cinnamon. Add cinnamon mixture to milk mixture, beating just until blended.
4. Beat egg whites in a large bowl with an electric mixer until soft peaks form. Gradually beat in remaining 1/4 cup granulated sugar until stiff peaks form. Fold into batter. Spread batter evenly over bananas in skillet.
5. Bake at 350° for 45 to 50 minutes or until a wooden pick inserted in center comes out clean. Cool in skillet on wire rack 10 minutes. Invert cake onto a serving plate. Serve warm with whipped cream, if desired.

Banana Nut Bread

Ingredients:
2 cups sugar
1/2 teaspoon salt
2 1/4 cups flour
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla
1 1/3 teaspoons baking soda
1/4 cup buttermilk
1 cup chopped pecans
4 -5 bananas (use completely black bananas, this is very important)

Directions:
Heat oven to 350°. Grease or spray 2 loaf pans.
In a large bowl, mash bananas with a masher or by well washed hands.
Dissolve soda in buttermilk– use a larger container as it will foam up quite a bit.
Mix all ingredients by hand and add in 1 cup chopped nuts. Bake at 350° for 1 hour, or until toothpick comes out ALMOST clean.
Totally clean will mean a dryer loaf.
Let cool 15 minutes after removing from oven and remove from pans.
Or, let cool, cover with foil, slide into freezer bags and freeze.
Great when using tin foil pans.

Ingredients:
1 cup butter, room temperature
2 cups sugar
2 teaspoons vanilla extract
4 eggs
2 1/2 cups flour
1/2 cup baking cocoa
2 teaspoons baking soda
1 teaspoon salt
4 ripe bananas, mashed
1 cup sour cream
1 cup milk chocolate chips

Directions:
Cream the butter, sugar and vanilla together.
Then add the eggs and mix.
Then put in the dry ingredients and mix well.
Add the bananas and sour cream and mix.
Then add in the chocolate chips and pour into 3 greased loaf pans.
Bake at 350 for 1 hour, or until a toothpick that has been inserted into the center comes out clean.

  • 1/2 cup strawberry puree

  • Chocolate Ganache:
  • 1 cup whipping cream

Preparation

  1. Preheat oven to 350 degrees. Combine bananas and lemon juice in a small bowl; set aside. Beat butter and sugar at medium speed with an electric mixer until creamy. Add eggs, 1 at a time, beating until blended after each addition. Combine flour, baking soda, and salt. Add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in vanilla and reserved banana mixture. Place paper baking cups in 2 (24-cup) mini muffin pans lined with mini paper baking cups coated with cooking spray. Spoon batter into cups, filling two-thirds full. Bake for 10 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans to wire racks, and cool completely.
  2. To prepare Vanilla Frosting, beat first 4 ingredients at medium speed with an electric mixer until creamy. Gradually add powdered sugar, beating at low speed until blended. Beat at high speed 2 minutes or until creamy. Make 3 cups.
  3. To prepare Chocolate Frosting, beat first 4 ingredients at medium speed with an electric mixer until creamy. Gradually add powdered sugar, beating at low speed until blended. Beat at high speed 2 minutes or until creamy. Makes 3 cups.
  4. To prepare Strawberry Frosting, beat butter, strawberry puree, and, if desired, extract, at medium speed with an electric mixer until creamy. Gradually add powdered sugar and salt, beating at low speed until blended. Beat at high speed 2 minutes or until creamy. Makes 3 cups.
  5. Place 3 mini banana cupcakes in a dessert dish. Place 1 miniature scoop of each flavor of frosting on each cupcake to resemble scoops of icecream. Top each dessert with a drizzle of Chocolate Ganache, toasted pecans, mini chocolate candies, and 1 cherry.
